Cauliflower Rice

Cauliflower is an insanely awesome vegetable. I could make a cauliflower cookbook for all the ways I have used it. Many of my recipes use cauliflower rice as a substitute for regular, carb-crazy rice, or as an ingredient in making tortillas, bread, soup, pizza crust... and more. I wanted to share how easy it is to make and have it in one spot for reference in other recipes.


Take a half of a head of cauliflower and put pieces of it in the food processor. Pulse for like 3 seconds or until it gets all crumbly and rice-y looking. Throw on a frying pan to lightly toast it. Eat or store for later use.

Warning: This makes A LOT. So use a half-head if you are feeding multiple people or yourself for multiple meals. 

Bonus: Throw some spices in with it on the pan. A little lime juice and cilantro makes an awesome side to some Mexican inspired dishes, or garlic/onion for some heartier meals.
