Tortellini Pasta Salad

This was one of my go-to meals when I used to only calorie count and not consider any real nutrition. I have changed it to be more nutritious and delicious. I don't think Tortellini is necessarily fix-approved, so if you are strictly following the fix I would sub in whole-wheat pasta or quinoa pasta instead. But this is a life-style change and I refuse to part with my beloved tortellini! 


  • Frozen bag of tortellini of your choice (I did cheese filled but you could do meat, or spinach, or whatever your little heart desires)
  • Olive oil
  • Parmesan cheese
  • Tomatoes
  • Fresh mozzarella
  • Cucumber
  • Shredded cheese
  1. Boil half of the bag of tortellini or pasta of choice according to directions on package.
  2. While tortellini is boiling, slice/dice tomatoes and cucumbers. Cut up mozzarella also to desired size. I think a little goes a long way so I cut it fairly small or use the mini pearls.
  3. Rinse pasta in cold water to cool off.
  4. Mix pasta, cucumber, tomato, mozzarella. Drizzle a small amount of olive oil, sprinkle some parmesan cheese and a pinch of shredded cheese over the top. Mix well.
Makes approximately 4 servings.
