Fixed Fajitas

21day Fix approved Chicken Fajitas

Those of you who know me know that when in doubt, give me Mexican food. It is my all time favorite. I love that there are so many options to create with minimal ingredients, and it's all so savory. I'd rather snack on nachos than on chocolate! However going out for Mexican always somehow summons margaritas to my table, so I thought I could create fajitas at home to ward off the Margarita induced calories and to save money from dining out. Plus, it helps me to avoid the chips :)

  • 2 Chicken breasts
  • Red/yellow/orange peppers (make it easy on yourself and head to Trader Joe's to pick up a bag of fire-roasted fajita veggies)
  • Spinach
  • Cumin, cilantro, chilli powder
  • Cauliflower rice
  • Tortillas (optional)
  1. Rub chicken breasts with cumin, cilantro, and chili powder. Grill until no longer pink in the middle, or internal temperature is above 165*.
  2. Sautee spinach and peppers on a frying pan. 
  3. Chop up cooked chicken, and serve with cauliflower rice.
  4. You can do a few things with this... you can make one of those bowls and mix the rice, chicken, peppers, and spinach all together, or you can serve with some whole wheat tortillas and roll-up like a traditional fajita dish.
  5. Serves 2.
Fixed: 1R, 2G. Add 1Y for each 2 small whole-wheat tortillas.
